Banana & Dark Chocolate Cookies

These deliciously light cookies are quick to make and are perfect for a mid morning snack.


Soft Brown Sugar            100g

Butter                                  100g

Honey                                 1 tbs

Banana                              1 small

Self Raising Flour            200g

Baking Powder                1/2 tsp

Cinnamon                         1 tsp

Dark Chocolate                100g



This can recipe can be easily made by hand however I use a mixer out of habit.

Pre heat your oven to 180 degrees celsius and prepare a couple baking sheet with some baking parchment.

Beat together butter and sugar until light and fluffy, on a low speed add the banana and the honey. You may need to scrape down the sides of the mixing bowl to ensure the ingredients are well combined.

In a separate bowl mix together  flour, baking powder and cinnamon.

Add the dry ingredients to the mixer, and beat on a low speed until combined.

Chop up your favourite chocolate and add it to the mixture. I like a dark bitter chocolate, although I have used smashed up Easter eggs when testing this recipe and it worked well too.

Using a tablespoon or your hands divide the mixture into 12 balls, about half the size of a golfball and place on the baking sheets.

Bake for 12 – 15 minutes, but check them after 12 minutes. They should be golden brown.

Let the cookies cool for a few minutes  before transferring them onto a wire rack to cool completely.

Don’t resist the temptation to eat them whilst still warm. They taste especially good when the chocolate is still gooey.
